Garlic Butter Shrimp Skillet with Fresh Parsley

  • Author: Isabel
  • Total Time: 15 minutes
  • Yield: 4 servings 1x

Description

A quick, 15-minute weeknight dinner featuring seared shrimp in a rich garlic butter sauce with white wine and fresh parsley. It’s a one-pan meal that feels restaurant-quality but is easy enough for busy families.

Ingredients

Scale
  • 1.5 pounds raw, peeled, and deveined shrimp (large or extra-large)
  • 4 tablespoons unsalted butter
  • 68 cloves garlic, minced
  • ½ cup dry white wine (such as Pinot Grigio or Sauvignon Blanc)
  • 1 tablespoon fresh lemon juice
  • ½ cup fresh flat-leaf parsley, chopped
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Thaw frozen shrimp if necessary by soaking in cold water for 10-15 minutes. Pat shrimp completely dry with paper towels and season lightly with salt and pepper.
  2. Heat a large skillet (preferably cast-iron or stainless steel) over medium-high heat. Add butter and melt until it foams and turns a light golden brown (beurre noisette), about 2-3 minutes.
  3. Add shrimp to the pan in a single layer, ensuring not to overcrowd. Sear for 1-2 minutes per side until pink and opaque. Remove shrimp to a plate and set aside.
  4. Reduce heat to medium. Add minced garlic and red pepper flakes to the same pan. Stir constantly for 30-60 seconds until fragrant, being careful not to burn the garlic.
  5. Pour in the white wine (or broth substitute) and scrape up any brown bits from the bottom of the pan. Simmer for 1 minute to reduce slightly.
  6. Return shrimp and any accumulated juices to the pan. Squeeze in lemon juice and toss everything together for 1 minute to heat through.
  7. Remove from heat and stir in fresh parsley. Taste and adjust salt if needed.
  8. Serve immediately with crusty bread, rice, or pasta.

Notes

Patting the shrimp dry is crucial to ensure they sear rather than steam. Do not overcrowd the pan; cook in batches if necessary. Garlic burns quickly, so stir constantly once added. For a creamy version, stir in heavy cream after deglazing. This recipe is naturally gluten-free but check wine/broth labels. Avoid microwaving leftovers as it makes shrimp rubbery; reheat gently in a skillet.
