- 2 tbsp heavy cream or 2 oz mascarpone
- 1/4 cup honey (clover or wildflower)
- 1/2 tsp red pepper flakes
- 1 large baguette or 1 loaf sourdough bread
- 1 tsp olive oil
- 1/2 tsp flaky sea salt (plus pinch for seasoning)
- Fresh thyme leaves (optional, for garnish)
Instructions
- Drain the ricotta in a fine-mesh sieve for 10 minutes if it appears watery to ensure it holds its shape.
- In a mixing bowl, combine the drained ricotta, heavy cream (or mascarpone), and a pinch of salt. Whip with a hand mixer on medium speed for 2-3 minutes until smooth, fluffy, and holding soft peaks.
- In a small saucepan over low heat, warm the honey with red pepper flakes for 2-3 minutes until fluid and fragrant. Do not boil. Remove from heat and let cool slightly.
- Preheat oven to 400°F (200°C). Slice bread into 1/2-inch thick rounds and arrange on a parchment-lined baking sheet.
- Drizzle bread lightly with olive oil and sprinkle with a tiny pinch of salt. Toast for 5-7 minutes, flipping halfway, until golden brown and crisp.
- Spread a generous dollop of whipped ricotta over each piece of warm toast.
- Drizzle the hot honey over the ricotta in a zigzag pattern.
- Finish with a sprinkle of flaky sea salt and fresh thyme leaves if desired. Serve immediately.
Notes
Do not skip draining the ricotta if it is watery, as this prevents soggy crostini. Warm the honey gently to preserve its flavor; do not boil. Toast bread just before serving to maintain crispness. The whipped ricotta can be made up to 24 hours in advance and stored in the fridge. This recipe does not freeze well.
