Ultra-Fudgy Peanut Butter Swirl Brownies

  • Author: Isabel
  • Total Time: 30-35 minutes
  • Yield: 12-16 squares 1x

Description

Ultra-fudgy peanut butter swirl brownies ready in 30 minutes. No mixer needed, just one bowl. The ultimate 5pm dinner party dessert that looks impressive but is dead simple.

Ingredients

Scale
  • 60% dark chocolate chips or chopped high-quality dark chocolate
  • Unsalted butter (or coconut oil for dairy-free)
  • Granulated sugar
  • 2 large eggs
  • Vanilla extract
  • Almond flour (or all-purpose flour for non-gluten-free)
  • Unsweetened cocoa powder
  • Baking powder
  • Flaky sea salt
  • Creamy natural peanut butter

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a microwave-safe bowl, combine chocolate and butter. Microwave in 30-second intervals, stirring between each, until smooth. Alternatively, melt in a double boiler over low heat.
  3. Whisk in sugar, eggs, and vanilla extract vigorously for about a minute until the batter is glossy and thick.
  4. Stir in almond flour, cocoa powder, and baking powder until just combined. Do not overmix.
  5. Pour batter into the prepared pan and spread evenly. Drop spoonfuls of peanut butter on top.
  6. Use a knife or toothpick to swirl the peanut butter into the batter. Avoid over-swirling to maintain contrast.
  7. Bake for 20-25 minutes. The brownies are done when a toothpick inserted into the center comes out with moist crumbs.
  8. Let brownies cool completely in the pan before slicing. For faster cooling, chill in the fridge for 15 minutes.

Notes

Brownies continue to cook as they cool, so avoid overbaking. Natural peanut butter should be well-stirred and not too runny; chill for 10 minutes if necessary to hold shape. Store in an airtight container at room temperature for 3 days, fridge for 5 days, or freeze for 3 months.
