Description
A strategic, no-cook meal prep solution that mimics the luxury of a charcuterie board in a grab-and-go container. This recipe focuses on texture preservation and moisture control to keep ingredients fresh for up to five days.
Ingredients
- 8 oz (225g) Prosciutto di Parma
- 6 oz (170g) Chunky Fig Jam
- 6 oz (170g) Sharp Cheddar Cheese
- 4 oz (115g) Marcona Almonds
- 8 oz (225g) Sourdough Crackers
- 4 oz (115g) Pitted Green Olives (Manzanilla or Cerignola)
- 2 tbsp (30ml) Extra Virgin Olive Oil
Instructions
- Cube the sharp cheddar cheese into 1-inch cubes and toss lightly with extra virgin olive oil to prevent drying.
- Slice the prosciutto thinly against the grain and fold into loose rosettes or bundles to prevent sticking.
- Portion the fig jam into small silicone cups or a dedicated compartment to keep it separate from dry ingredients.
- Portion the green olives into the same wet compartment or a separate small container.
- Place sourdough crackers in an airtight ziplock bag, squeezing out excess air, and store in the dry compartment of the meal prep container.
- Assemble the containers by placing the prosciutto bundles in the largest compartment, followed by the cheese and almonds.
- Ensure wet ingredients (jam, olives) are completely separated from dry ingredients (crackers) to maintain texture.
- Label each container with the date and store in the back of the refrigerator for up to 5 days.
Notes
The key to success is separating wet and dry ingredients to prevent crackers from getting soggy. Use hard cheeses like cheddar or gouda as they hold up better in the fridge than soft cheeses. Do not freeze this meal prep as crackers will become soggy upon thawing. For best texture, eat crackers within 3-4 days.
