Description
A quick, no-cook lunch or snack made by rolling turkey, cheese, and spinach in tortillas with a creamy herb filling. Ready in 15 minutes and perfect for meal prep.

- 6 flour tortillas (6-inch or 8-inch)
- 8 oz (225g) soft cream cheese, softened
- 2 tablespoons butter, softened
- 1 teaspoon garlic powder
- 1 teaspoon dried dill
- Salt and black pepper to taste
- 8–10 slices deli turkey breast
- 1 cup shredded cheddar or Monterey Jack cheese
- 2 cups fresh baby spinach leaves, packed and dry
- Optional: ¼ cup chopped sun-dried tomatoes
- Optional: 2 tablespoons thinly sliced red onion
Instructions
- In a medium bowl, combine softened cream cheese, softened butter, garlic powder, dried dill, salt, and pepper. Mix until smooth and creamy.
- Lay tortillas flat on a clean surface. If stiff, microwave for 10 seconds to soften.
- Spread a thin, even layer of the cream cheese mixture over each tortilla, leaving a ½-inch border around the edges.
- Layer turkey slices, shredded cheese, and spinach leaves (and optional add-ins) evenly over the cream cheese.
- Starting from the long edge, roll the tortilla up tightly, tucking in the filling as you go.
- Wrap the rolled tortillas tightly in plastic wrap or parchment paper and refrigerate for at least 10-15 minutes to firm up.
- Remove from fridge, unwrap, and slice each roll into 1-inch pinwheels using a sharp chef’s knife.
- Serve immediately or store in an airtight container.
Notes
Ensure spinach is completely dry to prevent soggy pinwheels. Use a sharp knife for clean cuts. Do not skip the chilling step as it helps the pinwheels hold their shape when sliced. These freeze well un-sliced for up to 1 month.
