  • 4 salmon fillets (about 6oz / 170g each)
  • 2 tablespoons avocado oil or olive oil
  • Salt and freshly cracked black pepper
  • 8oz (225g) full-fat cream cheese, softened
  • 2 cups (60g) fresh baby spinach, packed
  • 4 cloves garlic, minced
  • 2 tablespoons fresh dill, chopped (or 1 teaspoon dried)
  • ¼ cup (25g) grated Parmesan cheese
  • Zest of 1 lemon
  • 1 tablespoon whole grain mustard
  • 1 teaspoon honey
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat oven to 400°F (200°C). Line a 9×13 inch baking dish with parchment paper.
  2. Pat salmon fillets dry with paper towels and season tops and bottoms with salt and pepper.
  3. Slice horizontally into the side of each fillet about two-thirds of the way through to create a pocket (do not cut all the way through).
  4. In a small skillet over medium heat, wilt the spinach with a tiny bit of oil for 1-2 minutes. Let cool slightly, then squeeze out as much water as possible using your hands or a towel. Chop the spinach.
  5. In a small mixing bowl, combine softened cream cheese, minced garlic, chopped dill, grated Parmesan, lemon zest, and the squeezed spinach. Mix until smooth.
  6. Stuff each salmon pocket with about ¼ cup of the cream cheese mixture. Secure with toothpicks if necessary.
  7. In a small bowl, whisk together whole grain mustard, honey, and lemon juice to make the glaze.
  8. Brush the glaze generously over the top of each salmon fillet.
  9. Bake for 12-15 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  10. Let rest for 2-3 minutes before serving. Garnish with extra dill and lemon juice.

Notes

Ensure the cream cheese is fully softened to avoid lumps. It is crucial to squeeze all excess water from the spinach to prevent a watery stuffing. Salmon continues to cook after removal from the oven, so pull it at 140°F for perfect doneness.
