Description
These soft raspberry almond bars are ready in 15 minutes of prep. A 5-ingredient one-pan dessert with a buttery crust, tart filling, and crumbly topping.

- 1.5 cups super-fine almond flour
- 1/2 cup unsalted butter, room temperature
- 1/4 cup granulated sugar
- 1/2 cup raspberry jam or preserves
- 1/2 teaspoon almond extract
- Pinch of salt
- Coarse sugar (optional, for topping)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides, and grease lightly.
- In a medium mixing bowl, combine 1.5 cups almond flour, 1/4 cup sugar, and a pinch of salt. Add 1/2 cup softened butter and mix until it resembles wet sand.
- Press the mixture firmly and evenly into the bottom of the prepared pan to form the crust.
- Drop spoonfuls of raspberry jam over the crust and spread into an even layer, leaving a small border around the edges.
- In the same bowl, combine remaining 1/4 cup almond flour, 1/4 cup sugar, and 1/2 teaspoon almond extract. Add 1/4 cup softened butter and mix until crumbly.
- Sprinkle the topping mixture evenly over the jam layer. Sprinkle with coarse sugar if desired.
- Bake for 20-25 minutes until edges are golden brown and topping is set.
- Cool completely in the pan on a wire rack before lifting out and slicing into 12 bars.
Notes
Use super-fine almond flour, not almond meal, for a tender texture. Ensure the crust is pressed firmly into the pan. Cool completely before slicing to prevent breaking. Bars can be frozen for up to 3 months.
