- 1/2 cup (115g) unsalted butter, room temperature
- 3/4 cup (150g) brown sugar, packed
- 1/4 cup (50g) granulated white sugar
- 1 large egg plus 1 egg yolk
- 1 tsp vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1/2 tsp baking soda
- 1 1/2 tsp ground cardamom
- 1/4 tsp salt
Instructions
- In a large mixing bowl, combine the softened butter, brown sugar, and granulated sugar. Mix until smooth, creamy, and slightly fluffy (about 1 minute with a fork or 30 seconds with a mixer).
- Add the whole egg, extra yolk, and vanilla extract. Mix until combined.
- Add the flour, baking soda, ground cardamom, and salt. Stir gently until just combined. Do not overmix.
- Scoop dough balls onto a parchment-lined baking sheet, leaving 2 inches between them. For best results, chill the dough for 10 minutes.
- Preheat oven to 350°F (175°C). Bake for 8-10 minutes. Remove when edges are golden but centers still look soft.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Butter should be soft, not melted. Do not overmix the dough to avoid tough cookies. Pull cookies from the oven when they look slightly underdone in the center as they will continue to cook on the hot pan. Store in an airtight container at room temperature for up to 5 days. For extra softness, add a slice of bread to the container.
