  • 3 medium bell peppers (mixed colors), sliced into 1-inch strips
  • 1 large yellow onion, sliced into wedges
  • 1 large red bell pepper, sliced into 1-inch strips
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt (or to taste)
  • Black pepper (to taste)
  • 23 tablespoons balsamic glaze
  • 1/4 cup fresh basil, chopped
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C). Line a large half-sheet pan (18×13 inches) with parchment paper or aluminum foil.
  2. Wash and dry peppers, removing stems and seeds. Slice into 1-inch wide strips. Slice onion into wedges. Slice sausage into 1/2-inch thick rounds or diagonal pieces.
  3. In a large mixing bowl, combine peppers, onions, and sausage. Drizzle with olive oil, balsamic vinegar, minced garlic, oregano, salt, and pepper. Toss until evenly coated.
  4. Spread the mixture onto the prepared sheet pan in a single layer, ensuring pieces are not crowded to allow for roasting rather than steaming.
  5. Roast in the preheated oven for 20 minutes. Halfway through (at 10 minutes), remove the pan and stir the mixture to ensure even browning.
  6. Remove the pan from the oven. Drizzle balsamic glaze evenly over the top and sprinkle with grated Parmesan cheese.
  7. Return to the oven for 2-3 minutes, or until the cheese is melted and bubbly.
  8. Remove from oven and garnish with fresh chopped basil. Serve immediately.

Notes

Do not overcrowd the pan, as this causes steaming instead of roasting. If using pre-cooked sausage, reduce cooking time by 5 minutes. For a homemade balsamic glaze, simmer 1 cup balsamic vinegar with 1 tablespoon honey until reduced by half. This recipe is naturally gluten-free if you verify the sausage contains no fillers.
