Description
A healthy, low-effort weeknight dinner featuring moist salmon and crispy roasted broccoli on a single sheet pan. This recipe is kid-approved, requires minimal cleanup, and comes together in about 30 minutes.

- 1.5 lbs salmon fillets (wild-caught sockeye or atlantic)
- 2 large heads broccoli (about 600g), cut into florets
- 3 tablespoons extra virgin olive oil
- 4 cloves garlic, minced
- 1 large lemon (half juiced, half sliced)
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- Kosher salt and freshly cracked black pepper
- 1 cup cherry tomatoes (optional, added in last 5 minutes)
- 1 bunch asparagus (optional substitute for broccoli)
Instructions
- Preheat oven to 400°F (200°C). Line a large half-sheet pan (18×13 inches) with parchment paper.
- Wash broccoli and cut into medium-sized florets. Toss with 2 tablespoons of olive oil, salt, and pepper. Spread in a single layer on the prepared pan, ensuring they are not crowded.
- Pat salmon fillets dry with paper towels. Place them on the pan nestled between the broccoli florets. Drizzle with the remaining 1 tablespoon of olive oil.
- In a small bowl, mix minced garlic, Italian seasoning, and red pepper flakes. Sprinkle evenly over the salmon and broccoli.
- Squeeze half the lemon over the entire pan. Place thin slices of the other half of the lemon on top of the salmon.
- Roast in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and is opaque, and the broccoli is tender-crisp with browned edges.
- Remove from oven and let rest for 2 minutes. Squeeze remaining lemon juice over the top if desired. Serve immediately.
Notes
Do not crowd the pan to ensure roasting instead of steaming. Pat salmon dry before seasoning for better browning. Check for doneness early as salmon cooks quickly. Leftovers can be flaked and tossed with cold broccoli for a salad.
