  • 1.5 lbs yellow potatoes (cut into 1-inch cubes)

  • 1 large lemon (zest and juice)

  • 2 sprigs fresh thyme (chopped)
  • 4 cloves garlic (minced)
  • 1.5 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp sweet paprika

Instructions

  1. Preheat oven to 425°F (220°C). Line a large sheet pan with parchment paper.
  2. Wash and cut potatoes into 1-inch cubes. Place in a large mixing bowl.
  3. Pat chicken thighs dry with paper towels and add to the bowl with potatoes.
  4. Drizzle olive oil over the chicken and potatoes. Add lemon zest, chopped rosemary, chopped thyme, minced garlic, paprika, salt, and pepper.
  5. Toss everything together until evenly coated and glistening with oil.
  6. Spread the mixture onto the prepared sheet pan in a single layer, ensuring pieces are not touching to allow for crisping.
  7. Roast for 25-30 minutes. At the 15-minute mark, flip the chicken and stir the potatoes.
  8. Chicken is done when internal temperature reaches 165°F (74°C). Potatoes should be fork-tender and golden.
  9. Remove from oven and squeeze the juice of half a lemon over the dish.
  10. Let rest for 5 minutes before serving.

Notes

Do not overcrowd the pan to ensure potatoes get crispy. Pat chicken dry before seasoning to promote browning. Add lemon juice after roasting to maintain brightness.
