- 1 medium yellow onion, diced
- 3 medium carrots, peeled and sliced into half-moons
- 3 stalks celery, diced
- 4 cloves garlic, minced
- 6 cups chicken broth (low-sodium)
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1 bay leaf
- 1 tablespoon soy sauce
- 1/2 teaspoon freshly cracked black pepper
- 2 cups shredded rotisserie chicken
- 8 ounces wide egg noodles
- 1/4 cup fresh parsley, chopped
- 1 tablespoon fresh lemon juice
- Salt to taste
Instructions
- Prep ingredients: Chop onion, dice carrots, slice celery, shred chicken, and mince garlic.
- Melt butter in a large Dutch oven or heavy-bottomed pot over medium heat.
- Add onion, carrots, and celery. Sauté for 5-7 minutes until onions are translucent and carrots soften.
- Add garlic, dried thyme, and oregano. Cook for 1 minute until fragrant, being careful not to brown the garlic.
- Pour in chicken broth, scraping the bottom of the pot. Add bay leaf, soy sauce, and black pepper.
- Bring to a boil, then reduce heat to low. Simmer uncovered for 10 minutes to rehydrate herbs and tenderize vegetables.
- Add egg noodles to the simmering broth. Cook for 8-10 minutes according to package directions, stirring occasionally.
- Stir in shredded rotisserie chicken and heat through for 2 minutes.
- Remove from heat and discard the bay leaf.
- Stir in fresh parsley and lemon juice.
- Season with salt to taste and serve immediately.
Notes
The soy sauce adds umami depth without tasting Asian. Fresh herbs should be added at the end to preserve flavor and color. Noodles absorb broth over time, so add extra liquid when reheating leftovers. This soup does not freeze well due to the noodles becoming mushy; freeze broth and chicken separately if needed.
