- 2 cups (340g) semi-sweet chocolate chips
- 1/2 cup (113g) salted butter
- 1/2 cup (100g) granulated sugar
- 2 tbsp light corn syrup
- 1 tsp vanilla extract
- Pinch of salt
- 1 cup (120g) roasted hazelnuts, chopped
- 2 tbsp water
Instructions
- Line an 8×8 inch baking dish with parchment paper, leaving an overhang on the sides, and lightly spray with cooking spray.
- Combine butter, sugar, corn syrup, and water in a medium saucepan over medium-low heat.
- Stir constantly until the butter melts and sugar dissolves, forming a thick, glossy syrup (about 3-4 minutes). Do not walk away.
- Remove the pan from heat and immediately add chocolate chips and vanilla extract.
- Stir gently until the chocolate is melted and the mixture is smooth and glossy. If lumps remain, return to lowest heat for 30 seconds max.
- Fold in the chopped hazelnuts until evenly distributed.
- Pour the mixture into the prepared pan and press down firmly with a spatula or greased wax paper.
- Refrigerate for 15-20 minutes until the top feels set and doesn’t stick to your finger.
- Slice into 9 squares or 16 small bites before serving.
Notes
Ensure your bowl and spoon are completely dry to prevent the chocolate from seizing. These brownies are best stored in an airtight container in the fridge for up to 5 days or frozen for up to 3 months. For a vegan option, swap butter for vegan butter sticks and use dairy-free chocolate chips.
