- 1 tablespoon apple cider vinegar (15ml)
- 1 tablespoon lemon juice (15ml)

- 1 teaspoon cinnamon (2g)
- 1/4 teaspoon nutmeg (0.5g)
- 1 cup all-purpose flour (120g)
- 1/2 cup packed brown sugar (100g)
- 1/4 cup granulated sugar (50g)
- 1 teaspoon baking powder (5g)
- 1/2 teaspoon salt (3g)
- 1 teaspoon cinnamon (2g)
- 1/2 cup unsalted butter, cold and cubed (113g)
- 1 teaspoon vanilla extract (5ml)
- 2 tablespoons extra butter for drizzling (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Peel and slice peaches into half-inch wedges. Toss with 1/2 cup sugar, apple cider vinegar, lemon juice, cornstarch, cinnamon, and nutmeg. Let sit for 10 minutes to draw out juices.
- In a medium bowl, whisk together flour, brown sugar, 1/4 cup granulated sugar, baking powder, salt, and 1 teaspoon cinnamon.
- Add cold, cubed butter to the dry ingredients. Use a pastry cutter or fingers to work butter into flour until coarse crumbs with pea-sized pieces form. Stir in vanilla extract.
- Pour the peach mixture into a 9×9 inch baking dish and spread evenly.
- Spoon the crumble topping loosely over the peaches. Do not press down. Drizzle with extra melted butter if desired.
- Place the baking dish on a rimmed baking sheet to catch drips.
- Bake for 45 minutes until the topping is golden brown and crispy, and juices are bubbling vigorously. Tent with foil if browning too quickly.
- Cool for 15 minutes before serving to allow juices to thicken.
Notes
Use cold butter for a flaky crumble. Let peaches rest with sugar to release juices. Always bake on a baking sheet to catch bubbling juices. Can be made gluten-free with a 1:1 flour blend or dairy-free with coconut oil.
