A nostalgic, one-pot comfort food dish featuring browned ground beef, long-grain rice, and melted cheddar cheese, designed for minimal cleanup and maximum flavor.
Ingredients
- 1 lb (450g) 80/20 ground beef
- 1 cup (180g) long-grain white rice
- 2 cups (200g) sharp cheddar cheese, shredded
- 2 cups (480ml) low-sodium beef broth
- 1 medium yellow onion, finely diced
- 2 cloves garlic, minced
- 2 tablespoons unsalted butter
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried parsley
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Heat a 12-inch skillet over medium-high heat. Add ground beef and break into small crumbles with a wooden spoon. Cook until no pink remains (5-7 minutes). Drain excess fat, leaving about 1 tablespoon.
- Reduce heat to medium. Add butter to the pan. Once melted, add diced onions and sauté until soft and translucent (3 minutes).
- Add minced garlic, garlic powder, onion powder, salt, and pepper. Cook for 1 minute, stirring constantly, until fragrant.
- Stir in the rinsed rice and toast in the beef-fat mixture for 1-2 minutes to add nutty depth.
- Pour in beef broth and scrape up any browned bits from the bottom of the pan. Stir to combine and bring to a boil.
- Once boiling, reduce heat to low. Cover with a tight-fitting lid and simmer undisturbed for 15-18 minutes until rice is tender and liquid is absorbed.
- Remove pan from heat. Keep lid on for 1 minute to let residual heat soften the cheese.
- Uncover and sprinkle shredded cheddar over the top. Stir gently until cheese is melted and creamy. Stir in dried parsley and adjust seasoning if needed.
Notes
Rinse rice under cold water until water runs clear to remove excess starch. Do not lift the lid while simmering to ensure proper steam cooking. Use block cheese and shred it yourself for better melting. If using lean beef, leave a tablespoon of fat for flavor. For dairy-free, swap butter for olive oil and use dairy-free cheese or nutritional yeast.
