Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8 inch baking pan with butter or cooking spray, or line with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, cinnamon, and salt until no lumps remain.
  3. In a separate bowl or the same one, whisk the melted butter, sugar, eggs, and vanilla until smooth and incorporated.
  4. Pour the wet ingredients into the dry ingredients. Stir gently with a spatula or wooden spoon until just combined. Do not overmix.
  5. Fold in the diced apples gently to distribute them evenly without crushing them.
  6. If using streusel topping, sprinkle it over the batter now.
