Description

Save Labor Day dinner with this smoky grilled bratwurst and peppers recipe. It’s a one-pan (or one-grill-grate) wonder that comes together in about 20 minutes, offering maximum flavor with minimal prep.


Ingredients

  • 8 Bratwurst Sausages (pork or turkey)
  • 2 Bell Peppers (mixed colors, sliced into thick strips)
  • 1 Large Yellow Onion (cut into wedges or thick half-moons)
  • 2 tbsp Olive Oil or Avocado Oil
  • 1 tsp Smoked Paprika
  • 1 tsp Garlic Powder
  • Salt and Black Pepper to taste
  • Soft Brioche or Pretzel Buns (toasted)
  • Dijon Mustard or Whole Grain Mustard (for serving)

Instructions

  1. Preheat grill to medium-high heat (375°F to 400°F) or heat a cast-iron skillet over medium-high heat.
  2. In a bowl, toss sliced peppers and onions with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
  3. Place bratwursts on the grill grates. Sear for 3-4 minutes without moving to get grill marks, then flip and cook for another 3-4 minutes until golden-brown.
  4. Push brats to one side of the grill and toss the seasoned peppers and onions into the empty space. Cook for 5-7 minutes, stirring occasionally, until tender-crisp and slightly charred.
  5. Move peppers around the brats. If brats are not fully cooked (internal temp 160°F), move everything to a cooler part of the grill or lower heat. Cover and cook for the last 5 minutes to finish cooking sausages and meld flavors.
  6. Toast buns cut-side down on the grill for 30 seconds.
  7. Serve brats and peppers in toasted buns with mustard.

Notes

Do not pierce the sausages to keep juices in. If using a gas grill, add wood chips in a smoker box for extra smoke flavor. Ensure brats reach an internal temperature of 160°F. Leftovers keep in the fridge for up to 3 days.
