- 1 teaspoon vanilla extract
- 1/2 cup Greek yogurt
- 21 oz can cherry pie filling
- Fresh or frozen cherries (optional, for garnish)
Instructions
- Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the long sides, and grease lightly.
- Crush graham crackers into fine crumbs. Mix crumbs with melted butter, granulated sugar, and salt until it resembles damp sand.
- Press the crust mixture firmly into the bottom of the prepared pan, packing it down evenly.
- In a large bowl, beat the softened cream cheese, confectioners’ sugar, vanilla extract, and Greek yogurt until completely smooth.
- In a separate cold bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until just combined, being careful not to deflate the cream.
- Spread the filling evenly over the crust.
- Cover the pan and refrigerate for at least 4 hours, or overnight for best results.
- Spoon the cherry pie filling over the chilled bars and spread evenly.
- Return to the fridge for 30 minutes to let the topping set slightly before slicing and serving.
