Description

A quick, frozen peach bellini slush that blends in just two minutes using frozen fruit for a perfect texture without diluting the flavor. Naturally gluten-free and perfect for summer entertaining.


Ingredients

  • 2 cups frozen peach halves or chunks
  • 1.5 cups dry Prosecco or sparkling wine
  • 23 tablespoons peach schnapps
  • 1 tablespoon fresh lemon juice
  • Mint leaves for garnish (optional)

Instructions

  1. If using fresh peaches, slice them and freeze on a baking sheet until solid (at least 4 hours). If using frozen peaches, proceed to the next step.
  2. Add the frozen peaches, peach schnapps, and fresh lemon juice to a high-speed blender.
  3. Blend on high until smooth, scraping down the sides if needed, to create a thick peach puree (30-60 seconds).
  4. Pour the Prosecco into the blender with the puree.
  5. Pulse the blender 3-4 times just to combine. Do not over-blend to preserve carbonation.
  6. Pour immediately into chilled glasses.
  7. Garnish with mint leaves if desired and serve right away.

Notes

Use frozen fruit for the best slushy texture; ice will water down the drink. Add Prosecco last and pulse gently to keep the bubbles. Chill glasses beforehand for longer-lasting coldness. Can be made ahead by storing the peach puree in the fridge and adding Prosecco right before serving.
