  • 1 cup granulated white sugar
  • 1/2 cup dark brown sugar
  • 2 tablespoons pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Combine water, white sugar, and brown sugar in a small saucepan. Stir gently with a whisk until sugars are mostly dissolved.
  2. Add pumpkin pie spice, ground cinnamon, and salt to the cold liquid. Stir to combine, allowing spices to rehydrate slightly.
  3. Place the saucepan over medium heat and bring the mixture to a gentle simmer. Stir constantly for 4-5 minutes until the sugar is fully dissolved and the liquid is clear and slightly thickened. Do not let it boil vigorously.
  4. Remove the saucepan from heat and let it sit for 5 minutes to allow the spices to infuse fully without overcooking.
  5. Place a mesh strainer over a glass jar and pour the warm syrup through to remove spice bits.
  6. Stir in the vanilla extract after straining to preserve its delicate flavor.
  7. Let the syrup cool completely to room temperature before sealing the jar, as it will thicken upon cooling.

Notes

Use fresh spices for the best flavor. If the syrup crystallizes, gently reheat with a splash of water and stir until dissolved. For a thicker consistency, simmer longer to evaporate more water. Store in the refrigerator for up to 2 weeks or freeze in ice cube trays for up to 3 months.
