  • 1 cup shelled edamame (150g)
  • 2 cups cooked rice (Jasmine or short-grain)
  • 1 medium cucumber, sliced into half-moons
  • 1 ripe avocado, sliced
  • 2 stalks green onions, thinly sliced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • ¼ cup low-sodium soy sauce (or Tamari for gluten-free)
  • 1 tablespoon toasted sesame seeds
  • Chili flakes or Sriracha, to taste
  • Black pepper, for seasoning

Instructions

  1. Prep ingredients: Slice cucumber, avocado, and green onions. Grate ginger. Whisk together soy sauce, honey, ginger, and sesame oil in a small bowl. Set aside.
  2. Heat edamame: Place shelled edamame in a microwave-safe bowl with 2 tablespoons of water. Cover with a damp paper towel and microwave on high for 2-3 minutes until heated through. Drain excess water.
  3. Cook salmon: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Place salmon fillets on the sheet, brush generously with half of the sauce, and season with black pepper. Bake for 8-10 minutes until the salmon flakes easily with a fork and is opaque throughout.
  4. Assemble bowls: Divide cooked rice among four bowls. Top each with a salmon fillet, a scoop of warm edamame, cucumber slices, and avocado slices.
  5. Serve: Drizzle the remaining sauce over the bowls. Sprinkle with green onions, sesame seeds, and chili flakes. Serve immediately while the salmon is warm.

Notes

Do not overcook the salmon; it continues to cook after removal from heat. For best texture, use day-old rice or spread fresh rice on a baking sheet to cool. Toast sesame seeds in a dry pan for 30 seconds for enhanced flavor. Store leftovers in an airtight container for up to 3 days, keeping sauce separate if meal-prepping.
