- 1/2 cup plain non-fat or low-fat Greek yogurt (120g)
- 1/2 cup sliced or slivered almonds (50g), toasted
- 1/4 cup finely diced red onion (30g)
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
- Optional: 2 tablespoons fresh dill or parsley, chopped
- Optional: 1 stalk celery, diced
- Optional: 1/4 cup cranberries or grapes
Instructions
- Shred the rotisserie chicken into bite-sized pieces and place it in a large mixing bowl.
- In a small bowl, whisk together the Greek yogurt, lemon juice, Dijon mustard, garlic powder, salt, and pepper until smooth and creamy.
- Pour the dressing over the shredded chicken and toss gently to coat evenly.
- Add the diced red onion and toss again, being careful not to mash the chicken.
- Stir in the toasted almonds and any optional herbs or vegetables.
- Toss one last time to distribute everything evenly.
- Chill in the refrigerator for 15-20 minutes before serving to allow flavors to meld (optional but recommended).
Notes
Toast almonds in a dry skillet for 2-3 minutes or in the oven at 350°F for 5 minutes for better flavor. Use plain, unsweetened Greek yogurt to avoid a dessert-like taste. If the yogurt is too runny, drain it in a cheesecloth for 10 minutes. This salad does not freeze well as the yogurt will separate; store in the fridge for up to 4 days.
