  • 1/2 cup sliced or slivered almonds (50g), toasted
  • 1/4 cup finely diced red onion (30g)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • Optional: 2 tablespoons fresh dill or parsley, chopped
  • Optional: 1 stalk celery, diced
  • Optional: 1/4 cup cranberries or grapes

Instructions

  1. Shred the rotisserie chicken into bite-sized pieces and place it in a large mixing bowl.
  2. In a small bowl, whisk together the Greek yogurt, lemon juice, Dijon mustard, garlic powder, salt, and pepper until smooth and creamy.
  3. Pour the dressing over the shredded chicken and toss gently to coat evenly.
  4. Add the diced red onion and toss again, being careful not to mash the chicken.
  5. Stir in the toasted almonds and any optional herbs or vegetables.
  6. Toss one last time to distribute everything evenly.
  7. Chill in the refrigerator for 15-20 minutes before serving to allow flavors to meld (optional but recommended).

Notes

Toast almonds in a dry skillet for 2-3 minutes or in the oven at 350°F for 5 minutes for better flavor. Use plain, unsweetened Greek yogurt to avoid a dessert-like taste. If the yogurt is too runny, drain it in a cheesecloth for 10 minutes. This salad does not freeze well as the yogurt will separate; store in the fridge for up to 4 days.
