  • 1 cup red grapes, halved (about 150g)
  • ½ cup plain full-fat Greek yogurt (120g)
  • 2 stalks celery, diced (about 100g)
  • ¼ cup walnuts, chopped (30g)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste
  • Optional: 1 tablespoon chopped fresh dill or parsley
  • Optional: ¼ cup finely diced red onion

Instructions

  1. Shred the rotisserie chicken using two forks and place it in a medium mixing bowl.
  2. Wash, dry, and halve (or quarter if large) the grapes. Dice the celery and add both to the bowl with the chicken.
  3. Toast the walnuts in a dry skillet over medium heat for 2-3 minutes until fragrant. Chop roughly and let cool.
  4. In a small bowl, whisk together the Greek yogurt, lemon juice, Dijon mustard, salt, and pepper until smooth.
  5. Pour the yogurt mixture over the chicken and grapes. Gently fold to coat evenly without crushing the grapes.
  6. Stir in the toasted walnuts and any optional herbs or onions.
  7. Chill in the refrigerator for at least 30 minutes to allow flavors to meld before serving.

Notes

Use full-fat Greek yogurt for the best creamy texture. If the yogurt is runny, strain it through cheesecloth for 15 minutes. Do not freeze this salad as the yogurt will separate. For best flavor, chill for at least 30 minutes before eating. If serving on greens, keep dressing separate until ready to eat to prevent sogginess.
