  • 2025 mini bell peppers (approx. 1 lb, mix of colors)
  • 1 lb ground turkey (93% or 99% lean)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp taco seasoning (low-sodium or homemade)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned, drained)
  • 1/4 cup chicken broth (low-sodium)
  • 1/2 cup shredded cheese (Cheddar or Monterey Jack, optional)
  • 1 large avocado, sliced or diced
  • 1 lime, juiced
  • Olive oil (for cooking)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Wash mini peppers. Slice off the top 1/4 inch to create a flat base and remove the stem. Scoop out seeds and white membranes. Place peppers cut-side up on the baking sheet.
  3. Heat a large skillet over medium-high heat with a splash of olive oil. Add diced onion and cook for 2-3 minutes until translucent.
  4. Add minced garlic and cook for 30 seconds until fragrant.
  5. Add ground turkey, breaking it up with a spoon. Cook for 4-5 minutes until no longer pink. Drain excess grease if necessary.
  6. Reduce heat to medium. Stir in taco seasoning, black beans, corn, and chicken broth. Simmer for 2-3 minutes until flavors meld and liquid reduces slightly.
  7. Fill each pepper with the turkey mixture, leaving a little room at the top. Sprinkle with cheese if using.
  8. Bake for 12-15 minutes until peppers are tender but hold their shape and filling is hot.
  9. Remove from oven and let cool for 2-3 minutes. Top with avocado slices and fresh lime juice before serving.

Notes

Do not overstuff the peppers to prevent bursting. Ensure black beans are thoroughly drained to avoid soggy filling. These can be prepped and stuffed up to 24 hours in advance and stored in the fridge. They do not freeze well.
