- 4 cloves garlic, minced
- 8 ounces egg noodles
- 2 tablespoons unsalted butter
- 1 cup beef broth (low-sodium)
- 2 tablespoons flour
- 1 tablespoon Worcestershire sauce
- 1 teaspoon yellow mustard
- 1 cup sour cream (full-fat)
- 1 teaspoon dried parsley
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
- Optional: 8oz sliced mushrooms
- Optional: 1 tablespoon Dijon mustard
Instructions
- Prep ingredients: Dice onion, mince garlic, and measure spices. Bring a large pot of salted water to a boil.
- Cook egg noodles according to package directions until al dente. Before draining, reserve 1/2 cup of pasta water. Drain noodles and toss with a little butter to prevent sticking.
- While noodles cook, heat butter in a large skillet over medium-high heat. Add ground beef and cook for 5-7 minutes until browned, breaking it up with a spoon. Drain excess fat if necessary.
- Push beef to the sides or remove from pan. Add diced onion to the center and cook for 3-4 minutes until softened. Add garlic, thyme, and parsley; cook for 1 minute.
- Sprinkle flour over the beef and onions. Stir to coat and cook for 1 minute to create a roux.
- Pour in beef broth and Worcestershire sauce. Whisk continuously to prevent lumps. Simmer for 3-4 minutes until the sauce thickens.
- Remove the skillet from heat. Stir in sour cream gradually using residual heat to prevent breaking. If too thick, add reserved pasta water.
- Add drained egg noodles to the sauce and toss to coat. Season with salt and pepper to taste. Serve immediately.
Notes
Do not skip the reserved pasta water; it helps the sauce cling to the noodles. Ensure sour cream is at room temperature before adding to prevent separation. Always remove the pan from heat before adding sour cream to avoid a grainy texture. This dish does not freeze well due to the dairy content.
