- 1 teaspoon Dijon mustard

Instructions
- Prep the cabbage by removing outer leaves, halving the head, removing the core, and slicing into thin strips.
- Heat a 12-inch skillet over medium-high heat. Add ground beef, breaking it up with a wooden spoon. Season with salt and pepper. Cook for 8-10 minutes until browned, leaving about 1 tablespoon of fat in the pan.
- Reduce heat to medium. Add diced onion and cook for 2-3 minutes until softened. Add minced garlic and dried thyme, cooking for 1 minute until fragrant.
- Add shredded cabbage to the skillet. Pour in beef broth and Worcestershire sauce. Stir to coat. Cover with a lid or foil and simmer for 5-7 minutes until cabbage is tender-crisp.
- Remove lid. Stir in butter and Dijon mustard off the heat until melted and sauce is glossy. Adjust seasoning with salt and pepper.
- Serve immediately, garnished with fresh parsley if desired. Can be served over rice or mashed potatoes.

Do not overcook the cabbage; it should remain tender-crisp. Break up the beef into small crumbles for even cooking. Use low-sodium broth to control saltiness. Add butter off the heat to prevent the sauce from breaking. Can be made with frozen beef by thawing in the pan.
