Description
A smoky, sweet dessert ready in under 30 minutes with no oven required. This grilled pineapple upside-down cake is perfect for summer entertaining and Labor Day dinners.

- 15.25 oz Yellow Cake Mix
- 1/2 cup Unsalted Butter
- 1 cup Packed Brown Sugar
- 1 can (20 oz) Pineapple Rings
- 8–10 Maraschino Cherries
- 1/3 cup Water or Milk
- 1 tsp Vanilla Extract
- 1/2 tsp Cinnamon (optional)
Instructions
- Preheat your grill to medium heat (around 350°F).
- Place a cast-iron skillet on the grill and add butter and brown sugar. Melt and bubble for 2-3 minutes until a thick caramel forms.
- Drain pineapple rings and arrange them in a single layer in the caramel sauce. Place a cherry in the center of each ring.
- In a mixing bowl, combine cake mix, water (or milk), vanilla, and cinnamon. Whisk until smooth.
- Pour the batter over the pineapple rings.
- Place the skillet back on the grill, cover, and cook for 15-20 minutes until golden brown and a toothpick comes out clean.
- Remove from grill and let cool for 2-3 minutes.
- Place a large serving plate over the skillet and flip quickly to release the cake onto the plate.
Notes
Use room temperature ingredients for best results. Do not overmix the batter. Keep the grill lid closed to trap heat. If the cake sticks, serve it ‘upside-up’ as it still tastes amazing. Can be stored in the fridge for 3-4 days.
