Grilled Bacon Wrapped Corn: Easy 20-Min Side

  • Author: Isabel
  • Total Time: 20 minutes
  • Yield: 4 servings 1x

Description

Crispy bacon meets sweet corn in this 20-minute grilled side dish. No skewers needed—just foil, heat, and zero fuss for the perfect summer snack.

Ingredients

Scale
  • 4 ears sweet corn (fresh or frozen, thawed and dried)
  • 1216 slices thick-cut bacon
  • 2 tablespoons butter, melted (optional)
  • Kosher salt and black pepper
  • Kitchen twine or toothpicks
  • Optional: Parmesan cheese and chili flakes

Instructions

  1. Shuck fresh corn and remove silk, or thaw frozen corn completely. Rinse ears and pat them completely dry with paper towels to ensure crispy bacon.
  2. Cut each slice of thick-cut bacon in half. Wrap two halves around each ear of corn, overlapping slightly in the middle, starting from the bottom and wrapping diagonally to the top.
  3. Secure the bacon wrap using kitchen twine tied at the top and bottom, or insert toothpicks through the ends to hold the bacon in place.
  4. Preheat grill to medium-high heat (375–400°F). If using charcoal, arrange for indirect heat.
  5. Place wrapped corn on the grill. Cook for 2–3 minutes per side, rotating every 2–3 minutes to ensure even cooking and grill marks. Total cook time is about 10 minutes.
  6. Check for doneness: bacon should be golden brown and crispy, and corn should be hot throughout. Move to a cooler zone if bacon is browning too quickly.
  7. Remove corn from grill and let rest for 2 minutes. Remove twine or toothpicks. Brush with melted butter if desired, sprinkle with salt and pepper, and serve immediately.

Notes

Ensure corn is completely dry before wrapping to prevent steaming. Thick-cut bacon is essential to prevent burning. Can be made ahead by wrapping and refrigerating for up to 4 hours. Reheat in oven at 350°F for 10 minutes to restore crispiness.
