- 4 ears sweet corn (fresh or frozen, thawed and dried)
- 12–16 slices thick-cut bacon
- 2 tablespoons butter, melted (optional)
- Kosher salt and black pepper
- Kitchen twine or toothpicks
- Optional: Parmesan cheese and chili flakes
Instructions
- Shuck fresh corn and remove silk, or thaw frozen corn completely. Rinse ears and pat them completely dry with paper towels to ensure crispy bacon.
- Cut each slice of thick-cut bacon in half. Wrap two halves around each ear of corn, overlapping slightly in the middle, starting from the bottom and wrapping diagonally to the top.
- Secure the bacon wrap using kitchen twine tied at the top and bottom, or insert toothpicks through the ends to hold the bacon in place.
- Preheat grill to medium-high heat (375–400°F). If using charcoal, arrange for indirect heat.
- Place wrapped corn on the grill. Cook for 2–3 minutes per side, rotating every 2–3 minutes to ensure even cooking and grill marks. Total cook time is about 10 minutes.
- Check for doneness: bacon should be golden brown and crispy, and corn should be hot throughout. Move to a cooler zone if bacon is browning too quickly.
- Remove corn from grill and let rest for 2 minutes. Remove twine or toothpicks. Brush with melted butter if desired, sprinkle with salt and pepper, and serve immediately.
Notes
Ensure corn is completely dry before wrapping to prevent steaming. Thick-cut bacon is essential to prevent burning. Can be made ahead by wrapping and refrigerating for up to 4 hours. Reheat in oven at 350°F for 10 minutes to restore crispiness.
