Description
A vibrant, creamy, and refreshing salad featuring a homemade buttermilk herb dressing made with fresh parsley, basil, chives, and tarragon. This easy, no-cook meal is ready in 15 minutes and perfect for hot summer days.

- 1 cup packed fresh parsley
- 1/2 cup packed fresh basil
- 1/2 cup chopped fresh chives
- 2 tablespoons fresh tarragon
- 1/2 cup buttermilk
- 1/2 cup plain Greek yogurt (full-fat recommended)
- 1 clove garlic, minced
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon salt
- Black pepper to taste
- 2 heads romaine lettuce, chopped
- 2 large avocados, diced
- 3–4 hard-boiled eggs, sliced
- 1 cup shelled edamame, thawed
- 1 medium cucumber, diced
- 1/4 cup red onion, thinly sliced
Instructions
- Wash herbs thoroughly and pat completely dry. Remove thick stems from parsley and basil.
- Add parsley, basil, chives, tarragon, garlic, lemon juice, salt, and pepper to a blender. Pulse to chop herbs.
- Add buttermilk and Greek yogurt to the blender. Blend on high until smooth and vibrant green. Adjust consistency with more buttermilk or yogurt if needed.
- Chop romaine lettuce into bite-sized pieces. Dice avocado, cucumber, and red onion. Slice hard-boiled eggs.
- In a large bowl, combine lettuce, cucumber, red onion, and edamame.
- Drizzle about half of the dressing over the salad and toss gently to coat.
- Add avocado and eggs last. Drizzle remaining dressing on top and serve immediately.
Notes
Ensure herbs are completely dry before blending to prevent a watery dressing. The dressing can be made ahead and stored in the fridge for up to 5 days. Do not freeze the dressing as the texture will separate. For a dairy-free version, substitute Greek yogurt and buttermilk with vegan alternatives.
