- 16 oz (450g) full-fat brick-style cream cheese, softened
- 1/2 cup (120ml) mayonnaise
- 1/2 cup (120g) full-fat sour cream
- 4 cloves garlic, minced
- 10 oz (280g) fresh spinach
- 1 tbsp olive oil
- 14 oz (396g) can artichoke hearts, drained and chopped
- 1.5 cups (170g) sharp cheddar cheese, shredded
- 1 cup (110g) low-moisture mozzarella cheese, shredded
- 1/2 cup (50g) parmesan cheese, grated
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
Instructions
- Preheat oven to 350°F (175°C).
- Heat a large skillet over medium heat with olive oil. Add fresh spinach and cook for 2-3 minutes until wilted. Remove from heat, let cool for 5 minutes, then squeeze out all excess moisture using hands or a towel. Set aside.
- In a large mixing bowl, beat the softened cream cheese, mayonnaise, and sour cream with a hand mixer until completely smooth and lump-free.
- Add minced garlic, salt, black pepper, and red pepper flakes to the cream cheese mixture and mix briefly.
- Fold in the squeezed spinach, chopped artichoke hearts, and half of the shredded cheeses (cheddar, mozzarella, and parmesan) using a spatula.
- Spread the mixture evenly into a 9×9 inch baking dish or small casserole dish.
- Sprinkle the remaining cheese evenly over the top.
- Bake for 20-25 minutes until the edges are bubbling and the top is golden brown. Optionally broil for 1-2 minutes for extra crispness, watching closely.
- Let the dip cool for 10 minutes before serving to allow it to set slightly.
Notes
Ensure cream cheese is softened to room temperature to avoid lumps. Squeezing all water out of the spinach is crucial to prevent a watery dip. For best texture, serve warm with crusty bread, pita chips, or pretzels. Do not freeze as dairy may separate.
