  • 1/2 cup (120g) creamy peanut butter
  • 1/2 cup (100g) brown sugar, packed
  • 1/4 cup (50g) granulated white sugar
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 3/4 cup (95g) all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup semi-sweet chocolate chips or chunks
  • Extra peanut butter for drizzling (optional)
  • Flaky sea salt for sprinkling (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease an 8-inch cast iron skillet or oven-safe baking dish with butter or cooking spray.
  2. In a medium mixing bowl, combine softened butter, brown sugar, and white sugar. Mash and stir with a wooden spoon until the mixture resembles wet sand (about 1-2 minutes).
  3. Stir in the peanut butter, egg, and vanilla extract until smooth and homogenous.
  4. Add the flour, baking soda, and salt. Stir gently until no streaks of flour remain. Do not overmix.
  5. Transfer the dough to the prepared skillet and press it out evenly to the edges.
  6. Scatter chocolate chips or chunks over the top, pressing them in slightly. Dollop extra peanut butter on top if desired.
  7. Bake for 15-20 minutes, until edges are set and slightly golden brown, but the center still looks soft.
  8. Let cool in the skillet for 5-10 minutes to allow the center to set. Sprinkle with flaky sea salt if using, then serve warm.

Notes

Do not use melted butter as it makes the cookies cakey; softened butter is key for chewiness. The center will firm up as it cools, so err on the side of underbaking for a gooier texture. Can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
