- 1/2 cup (100g) brown sugar, packed

- 3/4 cup (95g) all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup semi-sweet chocolate chips or chunks
- Extra peanut butter for drizzling (optional)
- Flaky sea salt for sprinkling (optional)
Instructions
- Preheat oven to 350°F (175°C). Lightly grease an 8-inch cast iron skillet or oven-safe baking dish with butter or cooking spray.
- In a medium mixing bowl, combine softened butter, brown sugar, and white sugar. Mash and stir with a wooden spoon until the mixture resembles wet sand (about 1-2 minutes).
- Stir in the peanut butter, egg, and vanilla extract until smooth and homogenous.
- Add the flour, baking soda, and salt. Stir gently until no streaks of flour remain. Do not overmix.
- Transfer the dough to the prepared skillet and press it out evenly to the edges.
- Scatter chocolate chips or chunks over the top, pressing them in slightly. Dollop extra peanut butter on top if desired.
- Bake for 15-20 minutes, until edges are set and slightly golden brown, but the center still looks soft.
- Let cool in the skillet for 5-10 minutes to allow the center to set. Sprinkle with flaky sea salt if using, then serve warm.
Notes
Do not use melted butter as it makes the cookies cakey; softened butter is key for chewiness. The center will firm up as it cools, so err on the side of underbaking for a gooier texture. Can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
