Description
This fudgy Mississippi mud cake is the easiest dessert to make. Just mix, bake, and top with marshmallows. Ready in under an hour.

- 1 ½ cups All-Purpose Flour
- 1 ½ cups Granulated Sugar
- ¾ cup Unsweetened Cocoa Powder
- 1 tsp Baking Powder
- ½ tsp Baking Soda
- ½ tsp Salt
- 2 Large Eggs
- ½ cup Vegetable Oil
- 2 tsp Vanilla Extract
- 1 cup Buttermilk
- 1 ½ cups Semi-Sweet Chocolate Chips
- 1 bag Mini Marshmallows
- Chocolate Syrup or Ganache (Optional)
Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8 inch baking pan and line with parchment paper.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In a separate medium bowl or measuring cup, whisk eggs, oil, vanilla, and buttermilk until smooth.
- Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
- Gently fold in semi-sweet chocolate chips.
- Pour batter into prepared pan and smooth the top.
- Bake for 30-35 minutes. For marshmallow topping, add marshmallows at 25-28 minutes and bake for another 5-7 minutes until puffed and golden.
- Cool completely in the pan for at least 30 minutes before cutting.
Notes
The cake is done when a toothpick inserted into the center comes out with moist crumbs attached, not wet batter. For the ‘mud’ look, drizzle warm chocolate syrup or ganache over the cooled cake. Store in the refrigerator for up to 5 days.
