Ingredients

  • 16 oz (450g) block of feta cheese in brine
  • 1/2 cup (120ml) heavy cream
  • 3 tbsp (45ml) hot honey
  • 2 cloves garlic, minced
  • 2 tbsp (10g) fresh herbs (such as dill, chives, basil, or thyme), chopped
  • 1/2 tsp freshly cracked black pepper

Instructions

  1. Pat the block of feta dry with paper towels to remove excess brine, then crumble it into large chunks.
  2. Mince the garlic cloves until paste-like and chop the fresh herbs finely.
  3. Add the crumbled feta, minced garlic, and black pepper to a food processor. Pulse a few times until the cheese resembles coarse crumbs.
  4. With the processor running on low, slowly drizzle in the heavy cream. Blend for 1-2 minutes until smooth and creamy, scraping down the sides as needed.
  5. Turn off the processor. Gently fold in the chopped fresh herbs and hot honey by hand using a spatula.
  6. Taste and adjust seasoning if necessary.
  7. Transfer to a serving bowl. For best results, chill for at least 30 minutes to allow flavors to meld and texture to firm up.
  8. Drizzle with extra hot honey and serve with pita chips, crusty bread, or fresh vegetables.

Notes

Ensure ingredients are at room temperature for the smoothest texture. Pat the feta dry thoroughly to prevent a watery dip. The dip can be made up to 24 hours in advance and stored in the refrigerator. It freezes well for up to 2 months; thaw in the fridge and re-blend before serving.
