  • 1 large seedless watermelon (1012 lbs)
  • 1 cup fresh mint leaves, chopped
  • 2 tablespoons honey or agave (optional)
  • 2 cups heavy whipping cream, cold
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Fresh berries (strawberries or raspberries) for garnish
  • Edible flowers or extra mint for garnish

Instructions

  1. Wash the watermelon, slice off the top and bottom to create a flat base, then slice off the rind to reveal the pink fruit cylinder.
  2. Choose your shape: slice the watermelon cylinder into 1-inch thick rounds for a rustic look, or cube the watermelon to press into a springform pan.
  3. In a chilled mixing bowl, combine cold heavy whipping cream, powdered sugar, vanilla extract, and salt.
  4. Whip the cream using a hand mixer or whisk until stiff peaks form. Be careful not to over-mix.
  5. If using rounds, stack them on a cake stand or platter, spreading a thin layer of whipped cream between each layer.
  6. If using cubes, press them firmly into a lined springform pan.
  7. Spread the remaining whipped cream over the top and sides of the watermelon structure.
  8. Garnish with fresh berries, mint leaves, or edible flowers.
  9. Chill in the refrigerator for at least 30 minutes (or up to 1 hour) to allow flavors to meld and cream to set before slicing.

Notes

Ensure all ingredients, especially the cream and bowl, are very cold for best whipping results. If serving at a potluck, add 1/2 teaspoon of bloomed gelatin to the whipped cream to help it hold up in warm weather. Do not freeze this dessert as watermelon becomes mushy upon thawing. Best consumed within 24 hours.
