Description
A budget-friendly, weeknight-friendly dinner featuring juicy ground beef patties seared to perfection and smothered in a rich, creamy mushroom gravy. Ready in under 45 minutes.
Ingredients
Scale
- 2 lbs ground beef (80/20 lean-to-fat ratio)
- 1 large yellow onion (half finely diced for patties, half sliced for gravy)
- 8 oz cremini mushrooms, sliced 1/4-inch thick
- 1.5 cups low-sodium beef broth
- 1/2 cup heavy cream
- 1 tbsp Worcestershire sauce
- 3 cloves garlic, minced
- 3 tbsp all-purpose flour
- 1 tbsp ketchup
- 1 large egg
- 1/4 cup breadcrumbs
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 2 tbsp butter
- 1 tbsp oil (for searing)
Instructions
- In a large bowl, combine ground beef, half the diced onion, egg, breadcrumbs, ketchup, 1 tbsp Worcestershire sauce, salt, pepper, and paprika. Mix gently with hands until combined.
- Form mixture into 6-8 oval patties, about 1/2-inch thick. Place on a baking sheet and refrigerate for 10-15 minutes to help them hold shape.
- Heat 1 tbsp oil in a large skillet (cast iron or heavy-bottomed) over medium-high heat. Sear patties for 3-4 minutes per side until browned and internal temperature reaches 160°F. Remove steaks to a plate, leaving drippings in the pan.
- Reduce heat to medium. Add sliced mushrooms and remaining diced onion to the skillet. Sprinkle with salt and cook for 5-6 minutes until mushrooms release water and brown. Add minced garlic in the last minute.
- Push mushrooms to the side. Add 2 tbsp butter to the center. Once melted, sprinkle flour over butter and whisk constantly for 1-2 minutes to create a roux.
- Slowly pour in beef broth while whisking vigorously to prevent lumps. Scrape up brown bits from the bottom of the pan.
- Stir in heavy cream, remaining Worcestershire sauce, and a crack of black pepper. Simmer gently for 5-7 minutes until gravy thickens to coat the back of a spoon.
- Nestle cooked steak patties back into the skillet, spooning gravy over them. Cover and let sit for 2-3 minutes to absorb sauce. Serve immediately.
Notes
[‘Do not overcrowd the pan when searing steaks to ensure a good crust.’, ‘Use cold butter for the roux to help create a smoother texture.’, ‘Ground beef must reach 160°F for safety.’, ‘Gravy can be thickened with a cornstarch slurry if needed, or thinned with more broth.’, ‘Leftovers taste even better the next day as flavors meld.’]
