Ingredients

  • 2 lbs ground beef (80/20 lean-to-fat ratio)
  • 1 large yellow onion (half finely diced for patties, half sliced for gravy)
  • 8 oz cremini mushrooms, sliced 1/4-inch thick
  • 1.5 cups low-sodium beef broth
  • 1/2 cup heavy cream
  • 1 tbsp Worcestershire sauce
  • 3 cloves garlic, minced
  • 3 tbsp all-purpose flour
  • 1 tbsp ketchup
  • 1 large egg
  • 1/4 cup breadcrumbs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 2 tbsp butter
  • 1 tbsp oil (for searing)

Instructions

  1. In a large bowl, combine ground beef, half the diced onion, egg, breadcrumbs, ketchup, 1 tbsp Worcestershire sauce, salt, pepper, and paprika. Mix gently with hands until combined.
  2. Form mixture into 6-8 oval patties, about 1/2-inch thick. Place on a baking sheet and refrigerate for 10-15 minutes to help them hold shape.
  3. Heat 1 tbsp oil in a large skillet (cast iron or heavy-bottomed) over medium-high heat. Sear patties for 3-4 minutes per side until browned and internal temperature reaches 160°F. Remove steaks to a plate, leaving drippings in the pan.
  4. Reduce heat to medium. Add sliced mushrooms and remaining diced onion to the skillet. Sprinkle with salt and cook for 5-6 minutes until mushrooms release water and brown. Add minced garlic in the last minute.
  5. Push mushrooms to the side. Add 2 tbsp butter to the center. Once melted, sprinkle flour over butter and whisk constantly for 1-2 minutes to create a roux.
  6. Slowly pour in beef broth while whisking vigorously to prevent lumps. Scrape up brown bits from the bottom of the pan.
  7. Stir in heavy cream, remaining Worcestershire sauce, and a crack of black pepper. Simmer gently for 5-7 minutes until gravy thickens to coat the back of a spoon.
  8. Nestle cooked steak patties back into the skillet, spooning gravy over them. Cover and let sit for 2-3 minutes to absorb sauce. Serve immediately.
