Description

  • 10 oz bag marshmallows (mini recommended)
  • 1 1/2 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 1/2 cup mini marshmallows (optional, for texture)
  • 6 cups Rice Krispies cereal
  • 1/4 cup white chocolate chips (optional, for drizzle)

Instructions

  1. Lightly grease a 9×9 inch baking pan with butter or cooking spray, then line it with parchment paper, leaving an overhang on the sides.
  2. Melt the butter in a large saucepan over medium-low heat. Once foaming and melted, stir in the pumpkin pie spice and vanilla extract. Cook for about 30 seconds to bloom the spices.
  3. Add the marshmallows to the spiced butter. Stir constantly for 2-3 minutes until completely melted and smooth.
  4. Remove the pot from the heat immediately. Pour in the 6 cups of Rice Krispies cereal and gently fold to coat evenly without crushing the cereal.
  5. Transfer the mixture to the prepared pan. Use a lightly buttered spatula or hands to press the mixture down into an even layer, about an inch thick. Do not pack it tight.
  6. Let cool at room temperature for 20-30 minutes until firm. Lift out using the parchment overhang and slice into squares.

Notes

Keep heat on medium-low to prevent burning marshmallows. Fold cereal gently to maintain crunch. For gluten-free option, swap Rice Krispies for certified GF crispy rice cereal. Do not use pumpkin pie filling; use pure pumpkin puree if adding extra moisture.
