These 5-minute pumpkin spice Rice Krispie treats taste like autumn without the fuss. One-pot, no-bake, and ready in minutes for last-minute cravings.

- 1/2 cup unsalted butter
- 10 oz bag marshmallows (mini recommended)
- 1 1/2 tsp pumpkin pie spice
- 1 tsp vanilla extract
- 1/2 cup mini marshmallows (optional, for texture)
- 6 cups Rice Krispies cereal
- 1/4 cup white chocolate chips (optional, for drizzle)
Instructions
- Lightly grease a 9×9 inch baking pan with butter or cooking spray, then line it with parchment paper, leaving an overhang on the sides.
- Melt the butter in a large saucepan over medium-low heat. Once foaming and melted, stir in the pumpkin pie spice and vanilla extract. Cook for about 30 seconds to bloom the spices.
- Add the marshmallows to the spiced butter. Stir constantly for 2-3 minutes until completely melted and smooth.
- Remove the pot from the heat immediately. Pour in the 6 cups of Rice Krispies cereal and gently fold to coat evenly without crushing the cereal.
- Transfer the mixture to the prepared pan. Use a lightly buttered spatula or hands to press the mixture down into an even layer, about an inch thick. Do not pack it tight.
- Let cool at room temperature for 20-30 minutes until firm. Lift out using the parchment overhang and slice into squares.
Notes
Keep heat on medium-low to prevent burning marshmallows. Fold cereal gently to maintain crunch. For gluten-free option, swap Rice Krispies for certified GF crispy rice cereal. Do not use pumpkin pie filling; use pure pumpkin puree if adding extra moisture.
