- 1 cup 100% pure pumpkin puree
- 1 cup packed brown sugar
- 2 large eggs
- 1/2 cup milk
- 1/3 cup vegetable oil
- 1 1/2 tsp pumpkin pie spice
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with liners.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice.
- Add brown sugar, eggs, milk, oil, vanilla extract, and pumpkin puree to the dry ingredients.
- Stir with a whisk or fork until just combined; stop mixing as soon as no streaks of flour remain. Do not overmix.
- Divide batter evenly among muffin cups, filling each about 3/4 full.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 5 minutes before transferring to a wire rack or serving warm.
Notes
Do not overmix the batter to ensure fluffy muffins. Use 100% pure pumpkin puree, not pumpkin pie filling. Muffins stay fresh for up to 4 days in an airtight container or can be frozen for up to 3 months.
