Description
These 15-minute grilled shrimp skewers are the perfect Labor Day dinner. Juicy, garlicky, and ready before the grill even heats up.

- 1.5 to 2 pounds large shrimp (peeled and deveined)
- 1/2 cup (1 stick) unsalted butter
- 2 tablespoons extra virgin olive oil
- 4 cloves garlic, minced
- 2 tablespoons lemon juice (freshly squeezed)
- Zest from 1 lemon
- 1/2 teaspoon red pepper flakes
- 1/4 cup fresh parsley, chopped
- 1 teaspoon salt
- Bamboo or metal skewers
Instructions
- If using frozen shrimp, thaw in a colander under cold water for 5-10 minutes. Pat shrimp very dry with paper towels.
- In a small saucepan over low heat or microwave-safe bowl, melt butter and olive oil together.
- Stir in minced garlic, lemon juice, lemon zest, red pepper flakes, and salt. Whisk until uniform.
- Place shrimp in a large bowl or zip-top bag. Pour warm (not hot) marinade over shrimp and toss to coat.
- Let shrimp marinate for 10-15 minutes.
- If using bamboo skewers, soak in water for 30 minutes prior. Thread 4-5 shrimp onto each skewer in a zig-zag pattern.
- Preheat grill to medium-high heat (approx. 400°F) and oil grates well.
- Place skewers on grill and cook for 2-3 minutes per side, until opaque, pink, and curled into a loose ‘C’ shape.
- Remove from grill immediately and serve.
Notes
If using bamboo skewers, soak them in water for 30 minutes to prevent burning. Do not marinate shrimp for more than 30 minutes as the acid can change the texture. Shrimp cooks quickly; watch closely to avoid overcooking. For extra flavor, reserve some marinade to brush on cooked skewers.
