  • 67 large ripe peaches, peeled, pitted, and sliced
  • ¾ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon coarse sugar (like Turbinado)

Instructions

  1. In a large bowl or food processor, whisk together flour, sugar, and salt. Add cold cubed butter and pulse or cut in until mixture resembles coarse meal with pea-sized butter chunks.
  2. Gradually add ice water, one tablespoon at a time, mixing gently until dough clumps together. Divide dough in half, shape into disks, wrap in plastic, and chill for at least 1 hour.
  3. While dough chills, peel, pit, and slice peaches into ¼-inch thick slices. Toss with sugar, cornstarch, lemon juice, and vanilla. Let sit for 15-20 minutes to draw out juices.
  4. Preheat oven to 400°F (200°C). Roll out one dough disk into a 12-inch circle and transfer to a 9-inch pie dish. Trim edges, leaving a ½-inch overhang.
  5. Pour in the peach mixture, including all juices.
  6. Roll out the second dough disk and cut into ½-inch strips. Weave strips over and under to create a lattice pattern. Trim excess dough, fold edges under, and crimp.
  7. Brush lattice with milk or cream (optional) and sprinkle with coarse sugar.
  8. Place pie on a baking sheet and bake at 400°F for 20 minutes. Reduce heat to 375°F and bake for another 30-40 minutes until crust is golden and filling is bubbling vigorously.
  9. Let pie cool for at least 2 hours before slicing to allow filling to set.
