- 1/2 cup unsalted butter, softened
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 15 oz full-fat canned pumpkin puree
- 1 can (14 oz) condensed milk
- 2 large eggs
- 1 1/2 teaspoons pumpkin pie spice
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar (for glaze)
- 1–2 tablespoons milk or cream (for glaze)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving an overhang on the sides, and grease lightly.
- In a medium bowl, mix softened butter, flour, sugar, and salt until it resembles coarse crumbs.
- Press the crust mixture firmly into the bottom of the prepared pan using the bottom of a measuring cup.
- Bake the crust for 10-12 minutes until edges are lightly golden. Remove from oven and reduce temperature to 325°F (160°C).
- In the same bowl, whisk eggs, condensed milk, pumpkin puree, pumpkin pie spice, and vanilla until smooth.
- Pour filling over the hot crust and smooth the top.
- Bake for 20-25 minutes until edges are set and the center has a slight jiggle.
- Cool in the pan for 30 minutes, then refrigerate for at least 2 hours or overnight to set completely.
- Lift bars out using parchment overhang, drizzle with powdered sugar glaze, cut into squares, and serve.
Notes
Do not skip the chill time; warm bars will crumble. Use plain pumpkin puree, not pumpkin pie filling. If puree is watery, drain it before mixing. Bars taste better the next day and can be stored in the fridge for up to 5 days or frozen for up to 3 months.
