Description
A foolproof grilled appetizer featuring a wheel of Brie wrapped in foil with maple syrup, toasted pecans, and thyme. This method uses indirect heat to create a creamy, smoky, and gooey center without the cheese melting away.

- 1 wheel Brie cheese (8–9 oz / 225–250 g)
- 3 tbsp maple syrup (Grade A or B)
- 1/2 cup pecans, chopped and toasted (60 g)
- 1 tbsp butter, softened (14 g)
- 1 tsp fresh thyme leaves (or 1/2 tsp dried)
- 1/4 tsp flaky sea salt
Instructions
- Preheat your grill to medium heat (around 350°F / 175°C) using a two-zone setup (direct and indirect heat).
- Score the top rind of the Brie wheel with shallow cuts. Mix softened butter with thyme and spread this mixture into the cuts and over the top of the cheese.
- In a small bowl, combine chopped pecans and maple syrup until evenly coated.
- Place the Brie in the center of two sheets of heavy-duty aluminum foil. Spoon the maple-pecan mixture over the top.
- Fold the foil up and over the cheese, sealing it tightly to create a packet with no holes.
- Place the foil packet on the cool side of the grill (indirect heat). Close the lid and cook for 15-20 minutes.
- Check for doneness by gently pressing the foil; the cheese should feel soft. If firm, cook for another 5 minutes.
- Remove from grill and let rest for 5 minutes.
- Carefully open the foil, sprinkle with flaky sea salt, and serve immediately with crackers or fruit.
Notes
Use heavy-duty foil to prevent tearing and leaking. Ensure the grill is set to indirect heat to avoid burning the cheese. Toast pecans beforehand for better flavor. Do not freeze leftovers as the texture will become grainy.
