Description

  • 32 oz beef broth (low-sodium recommended)
  • 1 envelope (1.2 oz / 34 g) onion soup mix
  • 4 cloves garlic, minced
  • 2 loaves French baguettes (1620 inches each)
  • 1 tsp whole black peppercorns
  • 1 tsp kosher salt (plus more to taste)
  • 1 tsp black pepper
  • 1 tbsp olive oil (for searing, optional)

Instructions

  1. Pat the chuck roast dry with paper towels. Rub all over with 1 tsp kosher salt and 1 tsp black pepper.
  2. Optional: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Sear the roast for 3-4 minutes on each side until a deep brown crust forms. If skipping searing, place raw roast directly in slow cooker.
  3. Place the roast into the slow cooker.
  4. In a bowl, whisk together beef broth, onion soup mix, minced garlic, and whole peppercorns. Pour over the roast. The liquid should come about halfway up the sides of the meat.
  5. Cover and cook on LOW for 8 hours (or HIGH for 4-5 hours, though LOW yields better texture).
  6. Remove the roast and let it rest for 5 minutes. Shred the meat using two forks, discarding large pieces of fat or connective tissue.
  7. Pour the cooking liquid into a heat-proof measuring cup or bowl. Strain to remove peppercorns and onion pieces. Taste and adjust salt/pepper if needed. Keep warm.
  8. Slice baguettes in half lengthwise. Place cut-side up on a baking sheet and broil on high for 2-3 minutes until golden and crisp.
  9. Pile shredded beef onto toasted bread. Serve immediately with the warm jus on the side for dipping.

Notes

Do not use sirloin or round roast as they will be dry. Chuck roast is essential for tenderness. Let the meat rest before shredding to retain juices. Toast the bread to prevent sogginess. Serve jus on the side for dipping rather than pouring over the sandwich. For a thicker jus, simmer strained liquid in a saucepan for 10-15 minutes.
