Description

Chewy, buttery blackberry cobbler bars made with yellow cake mix and fresh or frozen berries. This easy dessert comes together in just 30 minutes with minimal cleanup.


Ingredients

  • 1 box (15.25 oz / 432g) yellow cake mix
  • 1/2 cup (113g) unsalted butter, melted
  • 1/4 cup (50g) granulated sugar
  • 4 cups (500g) fresh or frozen blackberries
  • 1 cup (120g) confectioners’ sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a medium bowl, combine the yellow cake mix, 1/4 cup of the melted butter, and 1/4 cup of granulated sugar. Mix until it resembles wet sand.
  3. Press the mixture firmly and evenly into the bottom of the prepared pan to form a solid crust.
  4. Spread the blackberries evenly over the crust.
  5. In a small bowl, whisk the confectioners’ sugar, remaining 1/4 cup melted butter, egg, and vanilla extract until it forms a thick, sticky paste.
  6. Drop spoonfuls of the topping mixture over the berries, dotting them all over.
  7. Bake for 20-25 minutes, or until the topping is golden brown and berries are bubbling vigorously.
  8. Let the bars cool in the pan for at least 15-30 minutes before cutting to allow the structure to set.

Notes

Do not thaw frozen blackberries before using, as this releases too much juice and makes the crust soggy. Ensure the crust is pressed firmly into the pan. Allow bars to cool completely before cutting to prevent them from falling apart. Can be stored in the fridge for up to 5 days or frozen for up to 3 months.
