These easy BBQ bacon cheeseburger sliders are the ultimate Labor Day feast. Juicy beef, smoky bacon, and tangy sauce on soft buns, ready in 30 minutes.

- 1.5 to 2 pounds ground beef (80/20 blend)
- 6 to 8 slices thick-cut bacon
- 12 Hawaiian rolls or potato rolls
- 12 slices cheddar cheese
- 1 cup BBQ sauce
- 1 tablespoon yellow mustard
- 1 tablespoon brown sugar
- 2 tablespoons melted butter
- 1 teaspoon minced garlic or garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper and bake bacon for 10-12 minutes until crispy. Chop bacon and reserve 1 tablespoon of rendered fat.
- In a large skillet over medium-high heat, brown the ground beef in the reserved bacon fat (or oil), breaking it into small chunks. Drain excess grease if necessary, but leave some for flavor. Season with salt and pepper.
- In a small bowl, whisk together BBQ sauce, mustard, and brown sugar to create the glaze.
- Slice the slider buns in half horizontally. Place the bottom layer of buns in a 9×13 inch baking dish.
- Distribute the cooked beef evenly over the bottom buns. Top with cheddar cheese slices, then scatter the chopped bacon over the cheese.
- Spoon the BBQ glaze evenly over the cheese and bacon.
- Place the top layer of buns over the filling. Brush the tops generously with melted garlic butter.
- Bake for 10-12 minutes until cheese is melted and buns are golden brown.
- Let rest for 2 minutes, then slice between the rolls to separate into individual sliders. Serve warm.
Notes
For best results, use 80/20 ground beef to keep sliders juicy. You can assemble these up to 24 hours in advance and refrigerate before baking. If buns brown too quickly, tent loosely with foil. Leftovers keep in an airtight container for up to 3 days; reheat in the oven to maintain crispiness.
