Description

  • 0.5 cup (60g) all-purpose flour
  • 2 large eggs, whisked with a pinch of salt and pepper
  • 1 cup (80g) panko breadcrumbs
  • 0.5 cup (50g) grated parmesan cheese
  • 1 tbsp (15g) Italian seasoning
  • 2 tbsp (30ml) vegetable oil
  • 1.5 cups (360ml) marinara sauce
  • 1.5 cups (170g) shredded low-moisture mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with foil and place a wire rack on top.
  2. Pat chicken breasts dry with paper towels. Place between plastic wrap or in a bag and pound to 0.5 inch thickness. Season lightly with salt and pepper.
  3. Set up three shallow bowls: one with flour, one with whisked eggs, and one with a mixture of panko, parmesan, and Italian seasoning.
  4. Dredge each chicken breast in flour, dip in egg wash, then press firmly into the breadcrumb mixture to coat evenly. Place on the wire rack.
  5. Brush the tops of the chicken generously with vegetable oil.
  6. Bake for 10 minutes to set the crust.
  7. Remove from oven. Spoon 2-3 tablespoons of marinara sauce over each piece, then top with shredded mozzarella.
  8. Return to oven and bake for another 5-8 minutes, until cheese is bubbly and chicken reaches an internal temperature of 165°F (74°C).
  9. Let rest for 2 minutes before serving.

Notes

Pounding the chicken to 0.5 inch thickness is crucial for even cooking and speed. Using a wire rack ensures the bottom stays crispy. Do not overload with sauce to prevent sogginess. For extra browning, broil for the last 1-2 minutes. Leftovers can be reheated in an air fryer or oven to restore crispiness.
