Crockpot Chicken Tortilla Soup with Fresh Lime

Description

An easy, dump-and-go slow cooker chicken tortilla soup that requires only 5 minutes of prep time. This vibrant, tangy, and comforting weeknight dinner is perfect for meal prep and freezes beautifully.


Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 4 cups low-sodium chicken broth
  • 1 can (10 oz) Rotel tomatoes with green chilies
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained (or 1 cup frozen)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 bay leaf
  • 2 fresh limes (juiced)
  • 1/2 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • Optional toppings: crushed tortilla chips, avocado, sour cream, shredded cheese, hot sauce

Instructions

  1. Rinse the black beans and corn. Dice the onion and mince the garlic. Juice the limes and set aside.
  2. Add the diced onion and minced garlic to the bottom of a 6-quart slow cooker.
  3. Place the chicken breasts on top of the onions and garlic.
  4. Pour in the chicken broth, Rotel tomatoes (with juices), rinsed black beans, drained corn, cumin, chili powder, and bay leaf.
  5. Stir gently to combine all ingredients.
  6. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the chicken is tender.
  7. Remove the chicken from the pot and shred it using two forks. Discard any fat or skin.
  8. Return the shredded chicken to the slow cooker.
  9. Stir in the fresh lime juice. Taste and adjust seasoning with salt, more lime, or hot sauce as desired.
  10. Serve hot, topped with fresh cilantro, crushed tortilla chips, avocado, sour cream, or cheese.

Notes

Rinse beans and corn well to remove excess sodium and starch. Add fresh lime juice at the end to prevent bitterness. For a thicker soup, mash some beans against the side of the pot. This soup freezes well for up to 3 months, but do not freeze with dairy toppings.
