  • ½ cup all-purpose flour
  • 1 teaspoon smoked paprika
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ to 1 teaspoon chipotle powder
  • 2 tablespoons vegetable oil
  • 2 limes
  • ½ head green cabbage, shredded
  • 1 medium carrot, grated or julienned
  • 12 tablespoons chipotle peppers in adobo sauce, minced
  • ¼ cup sour cream
  • 3 tablespoons fresh lime juice
  • 1 teaspoon maple syrup
  • Salt and pepper to taste
  • 8 small flour tortillas (6-inch)
  • ¼ cup fresh cilantro, chopped
  • 1 avocado, sliced

Instructions

  1. In a medium bowl, combine shredded cabbage, grated carrots, minced chipotle peppers, sour cream, lime juice, maple syrup, salt, and pepper. Toss until veggies are coated. Set aside.
  2. Pat thawed shrimp completely dry with paper towels. In a small bowl, mix flour, smoked paprika, cumin, garlic powder, chipotle powder, salt, and pepper.
  3. Toss dried shrimp in the spice mixture, shaking off excess to create a light, even coating.
  4. Heat vegetable oil in a large skillet over medium-high heat. Add shrimp in a single layer (cook in batches if necessary).
  5. Cook shrimp for 2-3 minutes per side until pink, opaque, and golden. Remove from heat and squeeze fresh lime juice over them.
  6. Warm tortillas in a dry skillet for 30-45 seconds per side until pliable. Keep wrapped in a towel.
  7. Assemble tacos by placing slaw on tortillas, topping with shrimp, and garnishing with cilantro and avocado.

Notes

Pat shrimp dry thoroughly to ensure crispiness. Do not overcrowd the pan to avoid steaming. The slaw tastes better if made 1-2 hours ahead. Avoid freezing as the slaw becomes watery and shrimp rubbery.
