Description

A crunchy, creamy, and spicy salad featuring jasmine rice, puffed rice cereal, and fresh veggies tossed in a rich, homemade spicy peanut dressing. Ready in under 20 minutes.


Ingredients

  • 2 cups cooked jasmine rice (cooled)
  • 1.5 cups puffed rice cereal (unsweetened) or crushed rice crackers
  • 1/3 cup creamy natural peanut butter
  • 23 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp lime juice
  • 1 tsp lime zest
  • 12 tbsp chili crisp (or Sriracha)
  • 1 tsp maple syrup or sugar
  • 1 cup shredded red cabbage and carrots
  • 1/2 cup chopped fresh cilantro
  • Warm water (as needed to thin dressing)
  • Crushed peanuts and toasted sesame seeds for garnish (optional)

Instructions

  1. Cook jasmine rice according to package instructions. Spread on a baking sheet or plate to cool completely. Cold or room-temperature rice works best.
  2. In a small bowl, whisk together peanut butter, soy sauce, lime juice, lime zest, chili crisp, and maple syrup/sugar.
  3. Add warm water one tablespoon at a time, whisking constantly, until the dressing reaches a pourable, creamy consistency.
  4. Shred red cabbage and carrots into thin strips.
  5. In a large mixing bowl, combine the cooled rice and puffed rice cereal. Toss gently.
  6. Add the shredded veggies to the bowl.
  7. Pour about half of the peanut dressing over the mixture and toss with tongs or large spoons until evenly coated. Add more dressing if desired.
  8. Transfer to a serving bowl and top with fresh cilantro, crushed peanuts, and extra chili crisp.
  9. Serve immediately to maintain the crunch of the puffed rice.
