Description

Ingredients

  • 4 large firm-ripe avocados
  • 1.5 cups (120g) panko breadcrumbs
  • 0.5 cup (65g) all-purpose flour
  • 2 large eggs
  • 2 tbsp minced chipotle peppers in adobo sauce
  • 0.5 cup (120g) plain Greek yogurt
  • 2 tbsp (30g) mayonnaise
  • 1 tsp (3g) garlic powder
  • 1 tsp (2g) smoked paprika
  • 1 tbsp (15ml) lemon juice
  • Salt and black pepper to taste
  • Olive oil spray

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut avocados in half lengthwise, remove pits, and scoop out flesh keeping skin intact. Slice each half into three equal strips to create 12 thick strips total.
  3. Set up a breading station with three shallow bowls: one with flour mixed with 1/2 tsp salt and 1/4 tsp pepper, one with whisked eggs and 1 tbsp water, and one with panko breadcrumbs.
  4. Dredge each avocado strip in flour, dip in egg wash, and press firmly into panko breadcrumbs. Place on a parchment-lined sheet pan with a wire rack, spacing them out.
  5. Spray breaded avocados lightly with olive oil spray.
  6. Bake for 15 minutes, flipping carefully halfway through, until golden brown and crisp on both sides.
  7. While avocados bake, mix Greek yogurt, mayonnaise, minced chipotle peppers, garlic powder, smoked paprika, lemon juice, and salt to taste to create the chipotle ranch.
  8. Let fries cool on the wire rack for 10 minutes to set the breading.
  9. Portion fries into four airtight containers and store the ranch separately in small jars or packets.

Notes

Use firm-ripe avocados to prevent mushiness. Toasting the panko breadcrumbs adds extra crunch. Store the ranch separately to keep the fries crisp. Can be frozen unbaked and baked from frozen by adding 5 minutes to cook time. Reheat in an air fryer at 350°F for 3-4 minutes if desired.
