  • 2 pounds boneless, skinless chicken thighs
  • 2 teaspoons Italian seasoning
  • Kosher salt and black pepper to taste
  • 2 tablespoons olive oil
  • 6 cloves garlic, minced
  • ½ cup sun-dried tomatoes (packed in oil), chopped
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 4 cups fresh baby spinach
  • ½ teaspoon red pepper flakes (optional)
  • ¼ cup fresh basil, chopped (optional)

Instructions

  1. Pat chicken thighs dry with paper towels and season generously with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken thighs in a single layer for 3-4 minutes per side until golden brown and cooked through (165°F). Remove chicken to a plate.
  3. Reduce heat to medium. In the same pan, sauté minced garlic and chopped sun-dried tomatoes for 1 minute until fragrant.
  4. Pour in chicken broth and scrape up brown bits from the bottom of the pan. Simmer for 2 minutes to reduce slightly.
  5. Add heavy cream and stir. Simmer for another 2 minutes until the sauce begins to thicken.
  6. Stir in Parmesan cheese gradually until melted and smooth. Add spinach and stir until wilted, about 1 minute.
  7. Return chicken thighs and any juices to the pan. Spoon sauce over chicken and let warm through for 1 minute.
  8. Garnish with fresh basil and red pepper flakes if desired. Serve immediately.

Notes

Do not skip searing the chicken for flavor. Use room temperature cream to prevent separation. Add Parmesan off heat to keep the sauce smooth. This recipe is naturally gluten-free but check broth labels. It does not freeze well due to the dairy sauce.
